Processing makes perfect
What makes one piece of chicken more flavorful and tender than the next? The difference is found in the processing technique and the size of the birds. The large poultry houses, including those brands most commonly found in supermarkets and offered by the large food distributors, process chickens from slaughter to final product down one long assembly line.
Without getting into all the messy details, this means that the animal is being processed while still in the preliminary stages of rigor mortis, or the stiffening of the muscles. Any meat processed during that time will be tougher than when the meat is allowed to rest long enough to reach the resolution of rigor. At Prestige Farms, we allow the chicken to rest 12 to 18 hours between slaughter and de-boning and the result is a more tender and flavorful piece of meat.
Also size matters. For our foodservice we process boneless from the small live weight birds. The live weight is generally a 3.85-4.25 pound chicken. This product is more tender than the medium and jumbo meat that a lot of our competitors sell. When it comes to the center of your plate, quality is of utmost importance.
Another reason our product remains moist and tender is that we offer truly fresh chicken. What does that mean? The Federal Safety and Inspection Service (FSIS) defines “fresh” as any product kept at or above 26° F. Moisture is lost at any temperature below freezing. The large distributors often store their product below freezing for long periods of time while still maintaining that it is a “fresh” product. At Prestige Farms we maintain our product between 32° and 38° F. from the time it enters our building until the time it is delivered to your door. The result is a naturally tender and more flavorful product.
